The story of Apprentice and our finest people
An apprenticeship is a time-honoured part of one’s training in becoming a chef. As an apprentice, you are put through your paces to ensure you can apply the theory and skills you’ve learned. You get the opportunity to hone your skills in the kitchen, on the plate, and on the floor, learning from those that have been in the industry for years. As chefs, you have the responsibility to pass on your knowledge and skill to the next generation, so they can one day do the same.
Apprentice Restaurant, situated in George, Western Cape, is the natural progression from the François Ferreira Academy. Our restaurant serves its customers scrumptious food paired with excellent service in a beautiful setting. Our aspiring chefs in training at our state-of-the-art Academy, need a soft landing in the industry where they will prepare to go into the world and share a kitchen with another chef. At Apprentice, the chefs in training will be working as part of a professional team, adding their talent to the mix, and at the same time learning from the masters in the kitchen.

Raised in the beautiful town of George, Western Cape, Chef Hermann has always held a deep affection for the area that shaped his early years. His culinary journey began at the Capsicum Culinary Studio in Cape Town, where he earned his professional chef diploma, laying the foundation for a remarkable career.
With a wealth of experience spanning many years, Chef Hermann started out at the five-star Sambona Wildlife Reserve. He then embarked on an international adventure, holding positions in both England and Scotland, further refining his craft and expanding his culinary repertoire.
Today, Chef Hermann brings his expertise and passion to Apprentice Restaurant, where he showcases his skills with the latest menu items. His love for Mediterranean, Italian, Greek, and French cuisines is evident in every dish he creates. Chef Hermann believes in using quality ingredients, combined in the best ways to deliver mouthwatering meals, every time
Chef Francois Ferreira, a cornerstone of Apprentice, has passed away, leaving behind a legacy that inspires us with his passion for food and compassion for people. Formerly the Principal of the François Ferreira Academy and a member of prestigious organizations like the South African Chefs Association and the South African Brandy Guild, Chef Francois’s journey began in 1979 with the South African Air Force. His accolades include winning the “SA Air Force Chef of the Year” twice and working with notable figures such as Prime Minister PW Botha and President FW De Klerk. Transitioning from military service to the hospitality industry, he held roles as Head Chef and consultant before founding the François Ferreira Academy in George in 2004. His extensive experience, knowledge, and vibrant personality continue to inspire us at Apprentice.
